ok so first of all, to throw an apple on the iPad version, you touch and hold the middle of the screen. then a little target-like circle will pop up right under your finger. you slide your tiger over to where'd get you're trying to throw, and lift up your finger. Same concept with Legolas's bow. ALSO DOES ANYONE KNOW HOW TO FINISH THE HELMS DEEP LEVEL ON THE IPAD??!!! The one before the actual Battle of Helm's Deep.

Typically ice walls are removed by building a fire. You'll need to find wood to build a place to make fire. This may be laying about, or you may need to smash things. Once you get enough wood a pad will appear and you can have one of the characters make fire and once lit it will melt the nearby wall.
