In Ashen you have a one-handed weapon slot and a two-handed weapon slot. After playing for a few hours you ideally have a powerful weapon in each slot which you feel comfortable with and suits your game style. Keep in mind that in order to progress through dark caverns you will need to have one hand available for your lantern so you will ideally need to have a one handed weapon as you won't be able to stick to a heavy two-handed weapon the entire game. You will be able to upgrade the weapons for a cost (see below) using the anvil in Vagrant's Rest once the town has been established.
All the weapons in Ashen as you can see from the lists below are very similar in handling and stats, with some minor differences. The Fanged Axe is a good choice, it has a moderate damage, quick move-set and 20% crit chance.
